A Delicious History
Tracing back to the Goguryeo era, what people know now as Bulgogi or marinated grilled beef, was a simple pre-salted skewered meat dish called Maekjok. The people who lived in the said era are called Maek, while Jeok means skewer. Through different eras in the history of Korea, the meat dish has also evolved into different names, varieties, and styles.
It became Seoryamyeok at some point, a brothy marinated beef soaked in cold water. Later on, in the Joseon era, the meat dish became a royal meal called Neobiani – a dish made from thick, flat, and wide slices of meat grilled over a charcoal fire.
What is Banchan?
Koreans believe that the rise of Buddhism during the mid-three Kingdom period that led to the banning of meat played a huge role in the rise of vegetable-based dishes in Korean culture. The ban ended during the Mongol invasion, but six centuries of vegetarian culture remained to be a major part of Korean cuisine. Although controversial for some, Korea’s rich and meaningful history gave birth to a festive yet healthy way of eating grilled meats.

“Searched for authentic Korean BBQ places and this place appeared. Reminded me of the time when my family and I had Korean BBQ at a non-touristy part of Korea. Seated around circular metal table with a smoke extractor in the middle above, we grilled our meats on a hot plate heated by charcoal. The hot plate also interestingly has a “moat” around it and the staff there would pour a liquid egg mixture into it. Half of it just that egg mixture, the other half with sweet corn in it.
